You can use this recipe for a whole family, just leave out the potatoes.

It’s a good alternative to a whole chicken. 

Ingredients 1 chicken breast, cut into 4-6 pieces  1/2 onion, diced  1 tsp.

garlic powder  1 clove garlic, minced  1 bunch basil leaves, roughly chopped  1 small tomato, diced 1/4 tsp.

salt  1 tbsp. olive oil  1 large sweet potato, peeled and diced  Directions Preheat oven to 400F.

Place the chicken breasts in a large skillet and cook until cooked through and no longer pink, about 10-12 minutes.

Meanwhile, combine the garlic powder, garlic, and basil leaves in a medium bowl. 

Add the onion, garlic powder and salt, and mix well. 

Pour the mixture into the chicken breast pieces and cover tightly.

Bake for 30 minutes.

Remove from the oven and let cool for 10 minutes. 

Place the sweet potato and tomato into a bowl.

Add the olive oil, basil, and tomato mixture and toss until well coated. 

 In a large mixing bowl, combine all the shredded chicken, baked potatoes, and cheese. 

Mix well.

Top with a slice of avocado, if desired. 

(NOTE: If you don’t have avocados, you can skip this step and just bake the sandwich instead.) Enjoy!
